The Hungarian Cuisine
Nowadays the recipes of Hungarian meals are different as in ancient times. The first Hungarian settlers had already eaten the meals that are in improved form also known at present (e.g.: bean soup, goulash soup).
During the history a plenty of impacts affected the Hungarian cuisine.
In the Turkish ages the marauding Turkish hordes robbed all of the farm animals, except for the pigs (because Moslems mustn't eat pork). For this time pork and lard is one of the most important raw materials of the Hungarian cuisine.
The first Hungarian settlers hadn't known the red pepper yet, it was got to the country with several kinds of vegetables (e.g.: tomato, cherry, sour cherry, corn) only in the Turkish ages.
Some of the Turkish meals became the part of the Hungarian national traditions (e.g.: "pitah">>"langosh", "szárma">>stuffed cabbage, strudel, "pogácsa", egg-barley).
At the age of Queen Theresa Mary and King Joseph 2 nd the cooks of the court prepared only French meals, and that affected the Hungarian cuisine, too (consommé, simmering, fricassee, etc.).
There is a very wide variety of soups in Hungary according to the raw materials and the way of preparation, too. It's a special Hungarian way of condensation, to use "rántás" which made from fat and flour. Some soups are one-course-dishes (bean soup a' la Jókai , "palóc" soup), but there are also light soups, which are made from fruits or vegetables.
We are very proud of the pastries (with fruits stuffed dumpling, pancake, strudel, etc), which are based on French and Austrian recipes.

During the various kinds of programmes our guests can get know the Hungarians' favourite meals. All of the food is made on the basis of the old traditional recipes (e.g. clear chicken soup, beef-stew with err-barley, "langosh" (baked in oven flat bread), salty biscuits with crackling, corn pie with plum jam). In this way you can get a glimpse of the world of Hungarian flavour, including the cold peasant meals and the festive dishes.
